Foodie

 I wasn't a foodie until I met my husband. I was happy to make boxed meals, Hamburger Helper and the occasional slow cooker meal. I was a single mom of a five-year-old whose picky palate mirrored my own. For years, she was convinced that she didn't like cheese. 

I was determined to learn how to cook, or, at the very least make a few meals that could be edible enough for the hubby to want me to make again. I had a huge collection of recipes and I didn't think it would be too difficult to try to make new things. Oh boy. I was wrong about that. I failed many times. I burnt a few things, undercooked a few things, over-salted somethings and under-seasoned others. It was definitely not as easy as I thought it would be.

Fast forward 12 years. I can't believe that I'm saying that. 12 years we've been together and still going pretty strong. I've learned quite a bit, and I'm not too shabby in the kitchen. I can hold my own for sure. 

I like cooking but baking is my favorite. However, in 2017, I went back to school and found that planning and making meals was exhausting. After that, my daughter joined marching band and it seemed like dining out was the quickest and easiest for our busy schedule. It took more energy than I wanted to give to menu planning which meant that elaborate meals/dishes were no longer a priority. 

Well, here we are in 2020. The year of coronavirus. And a time spent in quarantine and access to restaurants was limited. It was time to get back into the kitchen and into menu planning. So. I'm back. I don't know if I'm any better at cooking but I hope that it's good enough for my peeps to keep coming back for more food.

Crunchy Butter Chicken Tenders


Adapted from:
Moist Cheddar Garlic Oven Baked Chicken

Famous Butter Chicken

1 sleeve of Ritz crackers
1/4-1/2 c. panko bread crumbs
1/2 t. garlic salt
1/4 c. melted butter
8 chicken tenders, thawed

1. Preheat oven to 450. Spray cookie sheet with non-stick cooking spray.
2. Crush crackers in a bag.  Add bread crumbs and garlic salt, shaking to mix.
3. Dip chicken tenders in melted butter, place it bag and shake to coat. Repeat until all of the chicken tenders have been prepared.
4. Place onto prepared cookie sheet and bake for 14-18 minutes or until chicken is no longer pink.



Spinach & Feta Turkey Burgers and Greek Roasted Potatoes

We made this deliciousness for dinner last night! It was so good.  I was skeptical because Feta is a stinky cheese.  It was the perfect amount of seasoning and texture. Even my littlest lovebug ate it.

Menu Plan for the week of December 16, 2019

Monday the 16th: Instant Pot Ham Hock and Bean Soup from Simply Happy Foodie with Soft Dinner Rolls from AllRecipes.

Tuesday the 17th: White Chicken Enchiladas from Plain Chicken served with rice.

Wednesday the 18th: Slow Cooker Taco Soup from All Recipes served with cornbread.

Thursday the 19th: Easy Weeknight Lasagna in Slow Cooker from Around My Family Table served with garlic toast.

Friday the 20th: Chicken Bacon Alfredo Pizza from Six Sisters' Stuff served with a side salad.

Saturday the 21st: Family Movie date to see Star Wars: The Rise of Skywalker

Sunday the 22nd: Philly Cheesesteak Stuffed Peppers from Dinner Then Dessert.
